Breakfast: Breakfast Builders

Breakfast Builders

Try these ingenious labor-savers for your breakfast operation.

Biscuits
  • Griddle Muffins
Portion your muffin batter onto the grill for mouth-watering griddle muffins. Cook approximately two minutes on one side, then turn over and cook approximately one minute on the other side. Note: Some muffin batters may perform better if thinned slightly with a small amount of water.
  • Croissant French Toast
This easy and distinctive recipe will add an upscale touch to any operation's breakfast menu. Simply dip sliced day-old croissants (instead of bread) in your French toast batter and grill until golden brown.
  • Pineapple Biscuits
Start by opeing one #10 can of drained pineapples. Mix it with 12 oz. brown sugar and 8 oz. melted margarine. Place biscuit dough pucks on a full sheet pan on top of a pineapple chunk. Bake 13-18 minutes until golden brown, then invert pan. The look, smell, and taste will be irresistible.
  • Breakfast Muffins
Fill a muffin cup 1/3 full with corn muffin batter, then top with shaved ham, shredded cheese, and 1/2 tsp. prepared mustard. Portion additional batter to fill pans 2/3 full. Bake according to package directions.
  • Sweet Biscuits
Quarter your biscuit dough, fry until golden brown, and roll in cinnamon sugar while hot. Serve in an attractive bag. These will quickly become a morning regular for your morning regulars.
